Chicken Tomato BBQ Soup with Rice

Description

This is the perfect dinner to start when you get home, go get your chores done and have a delicious meal waiting on you when done! We work hard all day no need to work hard for dinner! We used cherry tomatoes for this recipe because they are so sweet and add an amazing layer of flavor! These flavors are bold and vary but they blended together beautifully!!

Ingredients
  • Two Springer Mountain Farms Chicken Breasts
  • Yellow Cherry Tomatoes Or Any Other Cherry Tomato
  • Half Onion Sliced Thinly
  • Half a Stick of Salted Butter
  • 1 cup of BBQ Sauce (We Used Berry Garcia - Russell's BBQ)
  • 1 teaspon of garlic paste or 4 cloves minced garlic
  • Two Bags Boil In Bag White Rice
  • Two tablespoons of all purpose seasoning of choice. (We used Dam Good Everything Seasoning - Russell's BBQ)
Instructions
  1. Put Chicken Breasts, Diced Onion, Tomatoes, Butter, Sauce, and Garlic into dutch oven and bake at 350 for 30 minutes
  2. Boil your rice and set to the side
  3. After 30 minutes shred chicken we used two forks to shred in the dutch oven
  4. Mix dutch oven contents together and bake for another 10 minutes to let chicken soak up flavor, leave covered. If you want more broth just add more water at this point
  5. After pulling and uncovering dump in your rice.
  6. Enjoy!
