Tony is extremely lucky to cook down at Memphis in May with the legendary Willingham's BBQ team using simply superior Springer Mountain Farms wings. Competition bbq is more of a style than it is a flavor profile as no step of the process isn't extra. These are just packed with amazing flavor, as the saying goes 'the more you put into it the more you get out of it'. Fresh Chicken Wings | Springer Mountain Farms

Ingredients
  • One Pack of Springer Mountain Farms Jumbo Wings
  • One Stick of Salted Butter
  • BBQ Sauce of Choice We Used Kingston's Select Original
  • Poultry Seasoning Blend of Choice
Instructions
  1. Trim all jumbo wings down to drums and flats, keep the tips for stock if you wish
  2. Preheat smoker to 300 degrees
  3. Toss wings in seasoning and give an even solid coat
  4. Place FLATS on smoker and cook for roughly 40 minutes or until golden brown on face down side and then flip, start melting your butter
  5. Cook for another 20 minutes roughly or until you see bubbles coming through the top part of the chicken flat around the edges
  6. After cooking is done on both side place the side that looks the worst side down in the butter for 15-20 minutes, we pull when dark golden brown
  7. Dump one tablespoon of butter into the sauce and then toss sauce on the wings
  8. Place on smoker for another 10-15 minutes until sauce gets sticky
  9. Pull and enjoy!
