This is a family favorite of Tony's! Chicken, Zucchini, and Tomatoes together can't have enough varieties in this house but this one is always a winner! The superior tasting chicken breast will always be bone in, you get that extra flavor as it cooks. It also makes a flavorful broth. Luckily for us Springer Mountain Farms Chicken is available close to us and that is all we will eat. This dish is best fresh but also does pretty well the next day heated up!



Split Breasts | Springer Mountain Farms

Ingredients
  • -Springer Mountain Farms Bone In Chicken Breast
  • - Chicken Seasoning of Choice
  • - Half Stick of Salted Butter
  • - One Zucchini Squash
  • - Bag Of Fresh Baby Spinach
  • - Two Medium Tomatoes Diced Up
  • - Fresh Mozzarella Cheese
  • -Balsamic Vinegar Glaze For Finishing Sauce
  • -Three Cups Water
  • -Olive Oil
Instructions
  1. - Season and place chicken in a Dutch oven pot. Skin side down and sear chicken breast, then add seasoning to your water and butter to your pot, cook chicken until 195 internally.
  2. - Debone and dice up chicken, place to side
  3. - In a skillet start cooking down tomatoes and zucchini, add olive oil and seasoning of choice.
  4. - Add back in chicken and stir
  5. - When zucchini is almost tender add on top bed of spinach
  6. - Add fresh mozzarella on top then place on low heat until cheese melts
  7. - Finish With Balsamic Glaze Drizzle
